Artichokes

There are 2 types of artichokes produced in Brittany according to the shape of the flower bud:

  • round as the Camus and Castel, both green artichokes or the Cardinal which is a purple one.
  • conical as the Petit Violet

At CADIOU, these varieties are available in conventional and organic.

A bit of history

The artichoke is a reservoir of antioxidants and vitamins.
Detox food by excellence, it is extremely low in calories and very rich in fibers.

Potassium, magnesium, sodium and calcium are contained in large quantities in its heart.
In smaller quantities, it also contains iron and zinc.

Calendar of availability

Artichokes arrive on the market in May and remain available until November.

Conservation

To keep its freshness, the artichoke must be kept in a cool and humid place, away from light (with its stem).

The Camus

The Camus is the variety of artichokes the most consumed in France. It is produced in Brittany.

This artichoke is round, its leaves are grey-green and its flower blue. Its taste is refined and its heart melting.

Available sizes : 9/11 – 11/13cm

The Castel

The Castel is a recent variety, created in the 90s. 

Very similar to the Camus, its heart is larger than its cousin’s.

It is therefore perfect for stuffing, with potatoes, bacon and soft-boiled eggs for example.

The Cardinal

The Cardinal is an even newer variety, created in 2015.

It resembles the Castel in size but has a purple color with purplish highlights.  

It is a robust artichoke with a generous and fleshy heart.

Its taste is milder and sweeter than its cousins Camus and Castel.

The Petit Violet

The Petit Violet is a small green and purple artichoke, conical in shape.

It is sold by head or in bunches of 5 heads: what is called a « poivrade ».

More tender than its round cousins, it can be eaten almost entirely.

Raw, it is delicious in carpaccio, sprinkled with flakes of Parmesan cheese.

Cooked, it is excellent pan-fried with traditional shallots and garlic, all marinated in olive oil.
